Smoked Cheddar-Apple Cornbread
An All-American twist on an All-American dish. Sweet and savory, and ULTRA moist, this is a recipe you'll make again and again.

- 1 Cup Cornmeal
- 3 Cups All-Purpose Flour
- 4 Eggs
- 2 Cups Milk
- 1 Green Apple Chopped into Tiny Cubes
- 1 Cup Sharp Cheddar Cheese Grated
- 1/2 Cup Applesauce
- 1/2 Cup Butter Melted
- 1/2 Cup Sugar
- 2 TBS Baking Powder
- 1 TBS Colman's Mustard Powder
- 2 tsp Salt
Preheat oven or smoker to 350 degrees F. Grease a 12-inch cast iron skillet or a 9x13 pan with a thick layer of butter.
In a large bowl, combine all dry ingredients, leaving out the cheese and apples.
In another bowl, whisk together all wet ingredients.
Combine wet and dry ingredients until just blended, then gently fold in cheese and apples.
Bake for 35 minutes. (Depending on your altitude, it might take up to 45 minutes. You'll know it's done when a toothpick can be inserted and come out clean.)

*Add jalapeno for a twist, or top with apple butter to enhance the sweetness.
