Smoked Cheddar-Apple Cornbread

An All-American twist on an All-American dish. Sweet and savory, and ULTRA moist, this is a recipe you'll make again and again.

Ingredients
  

  • 1 Cup Cornmeal
  • 3 Cups All-Purpose Flour
  • 4 Eggs
  • 2 Cups Milk
  • 1 Green Apple Chopped into Tiny Cubes
  • 1 Cup Sharp Cheddar Cheese Grated
  • 1/2 Cup Applesauce
  • 1/2 Cup Butter Melted
  • 1/2 Cup Sugar
  • 2 TBS Baking Powder
  • 1 TBS Colman's Mustard Powder
  • 2 tsp Salt

Instructions
 

  • Preheat oven or smoker to 350 degrees F. Grease a 12-inch cast iron skillet or a 9x13 pan with a thick layer of butter.
  • In a large bowl, combine all dry ingredients, leaving out the cheese and apples.
  • In another bowl, whisk together all wet ingredients.
  • Combine wet and dry ingredients until just blended, then gently fold in cheese and apples.
  • Bake for 35 minutes. (Depending on your altitude, it might take up to 45 minutes. You'll know it's done when a toothpick can be inserted and come out clean.)

Notes

*The mustard in this recipe gives the cornbread a delightful tangy zest, without overpowering the flavor. Colman's Mustard Powder is available on Amazon.
*Add jalapeno for a twist, or top with apple butter to enhance the sweetness.
