Miss Peach recently had her first birthday party. If I’m being honest…I was seriously stressing it. I work full-time, and I’m currently in a full-time Master’s program. On top of that, we moved into our new home less than two weeks before the party date.

The party was during the lunch hour, so I needed to feed a mixed–kid and adult–crowd. Because I was on both a financial and time budget, I decided to go with one of my favorite party recipes: chicken curry sandwiches.

A tea time classic, chicken curry sandwiches are fool-proof, yet impressive. Even the pickiest of eaters will love it. At least three people asked for my recipe, so here it is!

Chicken Curry Sandwiches

12 Croissants

4 Cans of Chicken

1 Cup Mayonnaise (up to 1 ½ Cup)

1 Cup Chopped Celery

½ Cup Minced Onion (yellow or white)

½ Cup chopped Green Onion

1 TBS Minced Garlic

1/3 Cup Yellow Curry Powder

1 tsp Celery Salt

Salt to taste

Cayenne Pepper to taste

Mix all ingredients together, and refrigerate overnight.

To serve, fill a croissant with the chicken curry mixture, and slice into thirds. Serves 12-15 people with appetites.

Letting it sit overnight is optional. However, this is the crucial step that takes this recipe from “good” to “WOW!”

You may or may not have heard of celery salt, but it’s one of my favorite spices. I use it in almost every poultry dish I prepare, it adds depth that regular salt can’t. It’s $13 well-spent, because you can use it in far more than just this recipe. Try it in chicken soup, or on your next Thanksgiving turkey.

I dressed my sandwiches up with these cute pearl toothpicks I found on Amazon. They have some cute options for every occasion, but I find myself using the pearl toothpicks for almost every party. A package of 100 lasts forever.
