Sometimes I worry people read my blog and think my family eats seven-course meals every day. Last week my toddler literally ate hot dogs and cheese every night for dinner. I ate frozen burritos twice. If I’m being honest, I’m exhausted. I’m juggling my passion project of this food blog, a full-time job in biomedical research, momming the cutest toddler, and working on a full-time MBA program. Sometimes I try to sleep too. Needless to say, I need fast, easy recipes as much as anyone else. This 60-Second BBQ rub is something I’ve perfected over time for busy weeknights.

This 60-Second BBQ Rub works on literally any meat. Here I show it with grilled chicken, but I’ve rubbed it on crockpot ribs, smoked salmon, and steak.

The best part about this rub is that you likely have all the ingredients in your pantry already. If you don’t, they are all common spices that won’t sit unused for years and years. It’s gluten-free, and can be Keto and whole30 approved if you take out the brown sugar.

I like rubs over marinades, because there is less sitting time. A marinade has to sit for hours or overnight to add flavor, a rub only needs a few minutes. In this post I grill the chicken, but you can cook it any way you like, no BBQ necessary.

Equipment

  • Grill, Smoker, or Oven.

Ingredients

  • 2 lbs Meat of your choice (Chicken shown here)
  • 2 TBS Brown Sugar
  • 2 TBS Chili Powder
  • 1 TBS Colman's Mustard Powder
  • 1 tsp Onion Powder
  • 1 tsp Seasoning Salt
  • 1 tsp Garlic Salt
  • 1 tsp Ground Black Pepper
  • 1 tsp Cornstarch

Instructions

  • Mix all ingredients together until well blended. Sprinkle over your choice of meat and rub it in thoroughly with your hands. Cook the meat however you'd like, in the case of chicken legs, 30 minutes on the grill, turning over after 15 minutes.
  • Will perfectly season 2 lbs of any meat, I recommend bone-in chicken, ribs, or steaks.

Notes

The brown sugar can be replaced with any sweetener of your choice, or removed altogether. 
This will of course change the taste, but it will still be delicious.
